Ingredients

  • 2 cups (250g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (30g) powdered sugar
  • 1 cup (225g) unsalted butter, at room temperature
  • 2 tablespoons loose-leaf Earl Grey tea, finely ground
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prep the Tea: Grind loose-leaf tea to a fine texture.
  2. Make the Dough: In a mixing bowl, combine the granulated sugar, powdered sugar, and butter. Beat until light and fluffy (2-3 minutes). Add the vanilla extract and ground Earl Grey tea, mixing well. Gradually add the flour and salt, mixing just until the dough comes together.
  3. Chill the Dough: Form the dough into a log (about 2 inches in diameter) or flatten it into a disc. Wrap it tightly in plastic wrap and chill in the refrigerator for at least 1 hour, or until firm.
  4. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Shape and Bake: If you shaped the dough into a log, slice into 1/4-inch rounds. If using a disc, roll out the dough on a floured surface and cut with cookie cutters. Place cookies on the prepared baking sheet, spacing them about 1 inch apart. Bake for 12-15 minutes, or until the edges are just starting to turn golden.
  6. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Optional Glaze (for added sweetness and flair)

Mix 1 cup (120g) powdered sugar with 2-3 tablespoons of milk or lemon juice until smooth. Drizzle over cooled cookies and allow to set before serving.
